  6. Thank you, Fay. I appreciate this recipe. So, if the ginger beer is to strong/spicy I should just add more sugar not more water as well? Also, what does the cream of tartar do?

    Thanks, I enjoy ginger beer, it's m favourite drink. I just made a gallon of ginger beer and two gallons of sorrell. I"m going to try this recipe next. I used more ginger than you did but didn't have the bite I was expecting. I think it may be the type of ginger I purchased at the Asian supermarket. Thanks for the recipe. Do you have a sorrell recipe. I don't have cream of tartar but I'm using 20 grains of rice to ferment each gallon. Wish me luck!!

  14. FYI the large 1 gallon bottles are called demijohns in the UK too, they're around £5 in Wilkinsons

    Just make sure you make it with Jamaican ginger and not chinese. Jamaican ginger has a unique taste, ie it has a sweet taste followed by the tang.
    It is thought by many food conisseurs to be the best ginger in the world because of its unique taste.
