Recipe for a 3.5 to 4 gallon batch ended up being 8 percent alcohol so you could make it a 5 gallon batch.
3 lbs of Dark Malt LME or (you could use a Porter LME)
2 lbs of Light DME
1 cup of Dark Brown Sugar
4 oz of Honey
1 oz of Vanilla Extract or Vanilla Powder
1 Cinnamon stick
1/2 tsp gound corriander
1/2 tsp nutmeg
1 oz of star anise oil
1 oz of Casscade hops
1.5 oz of Saaz Hops
2 to 4 oz of maltodextrin
1 Windsor Yeast packet
1 whirlflock tablet to the boil at 5 min
Now about the Root Beer Extract: either use 2oz of rootbeer extract in the boil and 2 oz in the bottling bucket or 4 oz to the boil (which is what I did here) or if you dont like it that strong just 2 oz to the boil or the put it in bottling bucket. you will have to decide.
Update 25 days after bottling its not as sweet as it was when I first tasted it, the vanilla had also almost disappeared with my previous batches I used the liquid vanilla extract I think it was better, this batch just wasnt as sweet and also I really should of stuck with just 2 oz of the root beer extract it was a liitle stong. I think I like the Sprecher Root Beer extract is better.
